Aronia Pear Muffins
Ingredients:
300 g flour
2 tsp baking powder
100g sugar
2 eggs
1 pinch salt
200 ml buttermilk
100 g cream cheese
100 g yogurt
100 g dried aronia berries
2 pears (or apples, if preferred)
Preparation:
Preheat oven to 175°C (350°F). Peel, core, and dice pears. Mix buttermilk with yogurt and cream cheese. Beat together eggs, sugar, and salt until foamy, and combine alternately adding the flour/baking powder mixture and the buttermilk/cream cheese mixture. Fold in aronia berries and pears, and pour into a silicon baking mold.
Bake on middle rack of oven at 175°C (350°F) for approximately 20 minutes.
